VINEGAR COMPANIES. Important in the nineteenth century for the preservation of foods made of meat and vegetables, vinegars came in several types. A mild form was used for cooking, a stronger form was made for table use, and a third kind was used in pickling.

Among the companies that made vinegar in Dubuque were the MISSISSIPPI VALLEY VINEGAR, MUSTARD AND PICKLING WORKS and the CUSHING-MCFADDEN VINEGAR COMPANY.
